Black Bean Burritos
with Chipotle Jack Cheese
Try these delicious burritos! This is absolutely one of our favorite vegetarian recipes, and super easy to make. Feel free to experiment with the ingredients. Some people like to add things such as minced garlic, corn, tomatos, chili powder, etc... If you can't find chipotle jack cheese, you can substitute marble jack. The recipe calls for about 1 cup, but feel free to use more or less depending on your preference. Serve with your favorite salsa.

Jalapeno Pepper
3 teaspoons (minced)

Cream Cheese
4 ounces

Red Pepper
¾ cup (chopped)

Red Onion
¾ cup (chopped)

7 ounces

4 8-inch tortillas

Wrap 4 tortillas in aluminum foil and heat in oven at 350°F for 10-15 minutes. (Alternatively, you can skip this step and just heat the tortillas in the microwave just before you use them - without the aluminum foil, of course!)

Shred about 1 cup of chipotle jack cheese.

Chop about ¾ cup of red pepper.

Chop about ¾ cup of red onion.

Mince about 3 teaspoons of jalapeno pepper.

Chop about 2 tablespoons of cilantro.

Cut 4 ounces of cream cheese into small (1-inch) cubes.

Heat 2 tablespoons of vegetable oil in a medium saucepan at medium-high heat.

Add the red pepper, onions, and jalapeno to the pan. Saute for a few minutes.

Add 7 ounces of green chiles and 2 teaspoons of ground cumin. Continue to saute for another minute.

Stir in about 1 teaspoon of salt (more or less depending on your preferences).

Stir in 15 ounces of black beans and 2 tablespoons of chopped cilantro.

Add the cubed cream cheese and stir until the cream cheese is thoroughly melted. Remove from heat.

Construct burritos by adding the bean & cream cheese mixture to flour tortillas along with the desired amount of shredded chipotle jack cheese. Tip: Apply an even layer to the entire tortilla, leaving a slight margin around the edges. Wrap by folding the sides in slightly and then rolling up from bottom to top.
